The “other” (l´Autre) of Domaine Pignier looks a bit more mature and stronger than that “Normal” Pignier - Crémant du Jura, but again with that chalky, salty freshness. Lots of walnut and walnut shell, light apple fruit, very vinous type, salty lemon. On the palate, too, it is more vinous and luscious, ultra-rich, juicy and salty, mega long and always makes you want the next sip. Turbo fabric!
Pure Chardonnay - from a single vintage and old vines from a small plot in the Val de Sorne - Matures without sulfur in a half-length barrel (600L), and then comes with the fermenting must of the following year on the bottle, where the L'Autre then goes into the second fermentation. More than It stays on the yeast for 30 months, before it is finally disgorged after almost three years. Zero Dosage.
The great vintage foam of the Domaine Pignier is a bit more complex than the “simple” Crémant, which is by no means simple. By completely dispensing with sulfur, the longer maturity in the wood and more time on the yeast the gets L'Autre once again more enamel and density.
