Somehow Joan seems to have a weakness for the grape varieties of the Loire. His chenins are awesome, with or without shell contact, in both colder and warmer years. But Joan can also do Cabernet!
It is based more on the cooler style of the Loire. The Coll del Sabater no longer sees any wood - instead, Joan Escoda makes it as a pure Cabernet Franc in clay amphorae, which have become more and more important in his work over the last few years. Even if the wine can go up to 14% in some years, it still remains slim and dense, with fine-grained tannins and dark, juicy fruit. Blackberries, black currants, a little mint, leather and green pepper.
No filtration, no sulfur, but super clean and elegant.
In the past, his Coll del Sabater was stylistically strongly based on Bordeaux. Joan had blended it with a little Merlot and matured it in the wood ... Today it is more oriented towards the cooler style of the Loire.
